Kate's Favorite Salad

This salad is simple yet incredibly filling and delicious. It's definitely my go-to dinner and can be easily altered to your liking! Feel free to add more veggies, sprouts and seeds to the salad to change it up a bit!

Ingredients:

Salad:

3 Cups chopped romaine
2 Cups spring mix
1 Cup chopped broccoli
1 Avocado
1 TBSP hemp seeds

Dressing:

2 TBSP raw tahini
2 TBSP balsamic vinegar
2 TBSP water
⅛ tsp garlic powder
 

Directions:

  1. Chop and prepare all salad ingredients and place into a large bowl
  2. Combine all dressing ingredients in a small jar or bowl and mix well until smooth and creamy.
  3. Pour dressing onto salad and enjoy! (Serves 1.)

Made the dressing with cashew butter because we had no tahini at home, tasted amazing! Thanks for sharing the recipe!!

hey ChrysStar— I’m not Kate (obviously, haha), but hemp seeds do not contain THC, the active component in marijuana that would show up on drug tests if you were to, say, smoke. Hemp-based foods and body products, at least in the US, are not allowed to contain THC. However, I bet that sunflower seeds would be really good in this, alternatively!

I’m just discovering the raw vegan life due to health and weight concerns. Thanks for the free recipes so that I can try before I purchase the ebook. But, if I can’t consume hemp seeds due to a condition of employment, what would be your replacement choice?

Are these supposed to be single serving salads?

Thanks for sharing, Kate! This is such a delicious salad dressing!! I literally ran my fingers around the inside of the bowl to get every drop of dressing out.

The only addition I made to this recipe was to chop a fresh apple in for some added crunch. Totally a personal preference, but I love a crisp fresh apple in my salads.
