Queen-Noah Salad

This is an extremely simple recipe.

And honestly you guys, I just love quinoa in my salad. But what really takes the cake for this recipe is yes, you guessed it.. the salad dressing. Make sure to check out my Sauce Queen eBook for more amazing vegan dressing recipes.

 

Ingredients

Salad:

1/4 cup dry quinoa
3 cups chopped romaine
1/2 chopped medium apple
1/2 cup chopped cucumber

Dressing:

2 tbsp Tahini
1 tbsp balsamic vinegar
1 tbsp nutritional yeast
1/2 tsp garlic powder
2-3 tbsp water
Pinch of salt and pepper

Directions

    1. In a small saucepan, stir in 1/4 cup quinoa and 1/2 cup water. Bring to a slight boil, cover, and reduce heat. Simmer on low for 15 min.
    2. Chop lettuce, apple, and cucumber. Add to a large bowl.
    3. In a small container or cup add Tahini, balsamic vinegar, nutritional yeast, garlic powder, salt and pepper. Mix well. Add 1 tbsp of water at a time and mix until creamy consistency is achieved. 
    4. Add quinoa to salad and pour over dressing. Mix well and enjoy!
