Raw Vegan Deviled Zucchini Boats

Ingredients

  • 2 large zucchinis
  • 1/2 cup cashews
  • 1 tsp turmeric powder
  • 1/4 tsp pink Himalayan salt
  • 2 tsp apple cider vinegar
  • 1 tsp yellow mustard
  • Pinch black pepper
  • Dash of paprika (topping)

SERVINGS: 1

Directions

  1. Slice both zucchinis in half (longways).
  2. Scoop out insides and put them into the blender.
  3. Add the rest of ingredients to a blender and blend on high until smooth and creamy.
  4. Put the blended mixture into a to-go container and zucchini boats into a separate to-go container in the fridge or until ready to serve.
  5. Scoop the deviled mixture into zucchini boats before serving, enjoy!
