NUTTY GINGER SALAD
This refreshing salad is packed with healthy fats and protein. Energizing and hearty, it has the perfect ginger zing and a touch of sweetness for a well rounded summer meal. Enjoy it for lunch or dinner!
Salad:
1 head romaine
1 carrot
1/2 cup broccoli
1/2 avocado
Dressing:
2 TBSP almond butter (or peanut butter)
1 TBSP coconut aminos
1/2 tsp fresh grated ginger (or ginger powder)
1/4 tsp garlic powder
pinch of Himalayan salt
1 TBSP water
1 tsp of maple syrup
Directions:
- Chop all salad ingredients and place in serving bowl.
- Combine dressing ingredients into a small bowl or container and stir well.
- Pour dressing over salad, mix and enjoy! serves 1.
