Queen-Noah Salad

This extremely simple recipe is from Freedom Food 2.0. It was SO much fun creating recipes with 8 ingredients or less! Not only are they healthy and easy to make, but DELICIOUS and SATISFYING.

This particular salad has been a staple in my diet for many years now that I had to make it apart of the Freedom Food series books. Honestly you guys, I just love quinoa in my salad. But what really takes the cake for this recipe is yes, you guessed it.. the salad dressing. #saucequeen

 

Ingredients

Salad:

1/4 cup dry quinoa
3 cups chopped romaine
1/2 chopped medium apple
1/2 cup chopped cucumber

Dressing:

2 tbsp Tahini
1 tbsp balsamic vinegar
1 tbsp nutritional yeast
1/2 tsp garlic powder
2-3 tbsp water
Pinch of salt and pepper

Directions

  1. In a small saucepan, stir in 1/4 cup quinoa and 1/2 cup water. Bring to a slight boil, cover, and reduce heat. Simmer on low for 15 min.
  2. Chop lettuce, apple, and cucumber. Add to a large bowl.
  3. In a small container or cup add Tahini, balsamic vinegar, nutritional yeast, garlic powder, salt and pepper. Mix well. Add 1 tbsp of water at a time and mix until creamy consistency is achieved. 
  4. Add quinoa to salad and pour over dressing. Mix well and enjoy!
