Raw Vegan Cinnamon Rolls

Nothing beats that donut shop bakery smell filling up your house in the early morning. I didn't really know what to expect when I first made this recipe, I mean how in the world could you make real cinnamon bun rolls out of bananas? But I have to say these are now one of my absolute favorite raw vegan treats! They are out of this world delicious and impressive! Once you try these babies, you will be obsessed.

 

Ingredients

Cinnamon Bun:

10 RIPE bananas

Date paste:

12 Dates

1/2 tsp vanilla extract 

1 tsp cinnamon

1/2 cup water

Coconut Icing:

1 cup fresh raw coconut meat

1 tbsp maple syrup

1/2 tsp vanilla extract

3 tbsp coconut water

(Pro tip: you can alternatively use my "cooler-whip" recipe for the icing in place of the coconut icing! Just make sure the cooler-whip is refrigerated overnight before using it. Get cooler-whip recipe here.)

*I use a dehydrator for this recipe!!*

Directions

Cinnamon Bun:

  • Peel and gently slice bananas long ways
  • Place sliced bananas on dehydrator sheet, inside facing up.
  • Dehydrate for 10 hrs at 110º F

 

Date Paste:

  • Soak 12 dates in water for 30 min
  • Using high speed blender add dates, vanilla, cinnamon and water
  • Blend until smooth and creamy, set aside

Coconut Icing:

  • Blend all coconut icing ingredients in high speed blender with tamper until smooth
  • Let chill in fridge for 1hr

Assembly

  • Remove banana from dehydrator and spread a thin layer of date paste onto inside of all banana slices (2 slices per roll).
  • Using one end of the first banana, slice begin to gently roll banana in on itself (inner layer with date paste will adhere itself outer layer as it rolls) forming a cinnamon bun shape. Take your second banana slice and connect to where first slice left off and continue rolling, creating a lager cinnamon bun. 
  • Place cinnamon rolls back into dehydrator set at 115º F for 2 hrs
  • remove from dehydrator and spread a spoonful of coconut icing on top of each cinnamon roll. Store in an airtight container in the fridge. You may also have leftover icing and date pate, you can also store those in separate containers in the fridge and use as a fruit dip!)
  • Now Enjoy!
