Broccoli Cheddar Soup
Soup is for the Soul
To be honest, when I first created this recipe I wasn't sure how it was going to come out. I wanted to create a soup that was creamy, cheesy, tasty AND not filled with ALL that sodium typical soups contain.The cannelloni beans adds creaminess and protein while the nutritional yeast gives this soup all of that cheesy flavor while adding all the B vitamins to your meal!
No matter the time of year, curl up next to this comforting bowl of delicious broccoli cheddar soup.
Ingredients
2 cups broccoli, finely chopped
1 cup Cannellini beans, rinsed + drained
2 cups low sodium vegetable broth
4 tbsp nutritional yeast
1 tbsp hemp seeds
1/2 tsp turmeric powder
1/8 tsp Himalayan salt
Dash of black pepper
Directions
- Place beans, nutritional yeast, turmeric, hemp seeds, vegetable broth, salt and pepper in a blender. Blend until smooth.
- Rinse and finely chop broccoli, heat a small sauce pan on high and mix both the soup and chopped broccoli, bring to a slight boil
- Reduce the heat down to low, cover and let simmer for 5 min or until broccoli softens
- Add additional salt to taste and Enjoy!
