Kate's Favorite Salad

This salad is simple yet incredibly filling and delicious. It's definitely my go-to dinner and can be easily altered to your liking! Feel free to add more veggies, sprouts and seeds to the salad to change it up a bit!

Ingredients:

Salad:

3 Cups chopped romaine
2 Cups spring mix
1 Cup chopped broccoli
1 Avocado
1 TBSP hemp seeds

Dressing:

2 TBSP raw tahini
2 TBSP balsamic vinegar
2 TBSP water
⅛ tsp garlic powder
 

Directions:

  1. Chop and prepare all salad ingredients and place into a large bowl
  2. Combine all dressing ingredients in a small jar or bowl and mix well until smooth and creamy.
  3. Pour dressing onto salad and enjoy! (Serves 1.)

Kinda reminds me of a creamy, slightly nutty, Cesar dressing. 10/10 would make again.

I love it! I put in some strawberries and a cup less of the romaine and half a cup less of the mix, and also skipped the hemp seeds because it costs so much here. For the dressing I messed about with the measurements rebased on what I like but it turned out perfect anyway! I had it with a protein smoothie. I would also recommend it with some sort of bean for some extra protein I’ve tried it before and it was super-good with the dressing! Thank you xxx
