Kate's Favorite Salad

This salad is simple yet incredibly filling and delicious. It's definitely my go-to dinner and can be easily altered to your liking! Feel free to add more veggies, sprouts and seeds to the salad to change it up a bit!

Ingredients:

Salad:

3 Cups chopped romaine
2 Cups spring mix
1 Cup chopped broccoli
1 Avocado
1 TBSP hemp seeds

Dressing:

2 TBSP raw tahini
2 TBSP balsamic vinegar
2 TBSP water
⅛ tsp garlic powder
 

Directions:

  1. Chop and prepare all salad ingredients and place into a large bowl
  2. Combine all dressing ingredients in a small jar or bowl and mix well until smooth and creamy.
  3. Pour dressing onto salad and enjoy! (Serves 1.)

This looks SUPER good! I will have to try it. Have to omit the avocado though…sadly i’m allergic to them. Maybe i’ll add some almonds or cashews instead. :)

I’m definitely trying that dressing! Vegan dressings have all been terrible. The last time I tried dairy just for a good flavored dressing I was in excruciating pain for hours after. I’m so picky, and this sounds exactly like something I’ll love!
