Vegan Pasta Salad
Super easy to make. Satisfying to eat, crowd-pleasing recipe, perfect to bring to parties or gatherings!
4 cups fusilli pasta (can sub with GF pasta of choice)
1/2 cup finely chopped green pepper
1/2 cup finely chopped red pepper
1/2 cup finely chopped celery
1/4 cup finely chopped red onion
1 cup vegan may (I used Follow You Heart original)
1 tsp vegan butter
1 TBSP agave
1 TBSP apple cider vinegar
1 TBSP chopped fresh dill
Dash of salt & pepper.
1.In a large saucepan bring about 10 cups of water to a boil, add a dash of salt to the water.
2.Stir in pasta, cook for about 10 minutes or until desired texture.
3.While pasta cooks, finely chop all your veggies.
4.Drain pasta and set aside to cool, add vegan butter and mix.
5.Bring chopped veggies, pasta, seasonings and mayo to a large bowl and mix well. Set in fridge for at least 2 hours.
